Jamaican jerk chicken & potato curry w/rice.

Here at Spyce HQ, we all love Jamaican food. But truth be told, it's largely overlooked, especially here in India. We know very little about it. Although we all know and love the classic Jamaican jerk chicken, most of us couldn't name 5 more Jamaican dishes. And that's a shame. Jamaican cuisine is bold, tropical, fresh, flavourful, spiced (not always spicy) and always wholesome, fragrant and delicious. It draws inspiration from a variety of cultures that currently do, or have previously, inhabited the island, primarily from Africa and South East Asia, including India. So if the bite feels familiar, it probably is. But rest assured, it's a wonderful mix of many cuisines, with the finishing touches of their own uniqueness and local produce, making it a phenomenal rabbit hole to go down, no pun intended :)


So, here we are, on a mission to make some great Jamaican inspired dishes that are unique, bold, easy to make and delicious. Notice we used the word 'Jamaican-inspired'? That's simply because we don't claim to be experts on global cuisines, nor we do know every little nuance of Jamaican cuisine. Besides, some of the commonly used ingredients in Jamaican cuisine aren't easily available here and if they are, they're fairly expensive. Hence, Jamaican-inspired. That said, however, the recipes will be delicious with our own little twist, optimised for ease, convenience and speed - the three golden pillars all our recipes are built on.


Right, let's get started. For this recipe, we recommend bone-in chicken - it' s just more flavourful and tender. We've used a standard curry cut. To the chicken, add finely diced onions, ginger, garlic, coriander and the Spyce Jamaican Jerk seasoning. Mix thoroughly until all the chicken is coated in the spice mix and if time permits, set aside to deepen the flavour.



Now to a pan, add a touch of olive oil and place the chicken to gently sear on the outside and turn golden brown. Cook for about 4-6 minutes, turning occasionally. Then add the water, until chicken is fully submerged and bring it to a gentle simmer, which should take another 4-6 minutes.


On a side note - If you're REALLY, REALLY pressed for time, you could cook this for another 6-8 minutes until the chicken is fully cooked and your chicken curry is ready but trust us, the humble potato works like magic and completely elevates the dish.


Ok, back to the recipe. After cooking on a gentle simmer for 4-6 minutes, add the peeled, uncooked potatoes and some more jerk seasoning and mix together. Now place a lid and cook on medium heat for 15-20 minutes, until the chicken is fully cooked through and the potato is soft to the bite.


And that's it - your Jamaican chicken and potato curry is ready and best served hot. Now, you could have this with carbs of your choice - roti, naan, pav etc. But we prefer ours with rice - it's simply a match made in heaven. Serve your curry over a bed of rice and garnish with coriander and serve with a wedge of lime.


This recipe is delicious, if we may say so ourselves, uses less than 10 ingredients, cost a super affordable Rs. 100 per portion, with close to 40g of protein and comes together in less than an hour - now if that isn't the pefect meal, we don't know what is.
